Hattannishiki is one of the representative sake rice varieties used by Suigei. Aiming to make a pure rice sake that makes the most of the flavor of the ingredients, the rice is polished to 60%. For the yeast, Suigei’s traditional in-house yeast is used, aiming to produce a sake with a good balance of flavor and aroma. The koji is carefully made and brewed slowly at low temperatures. After bottling, the sake is stored in the refrigerator and shipped according to the order.

It features a refreshing aroma and a smooth taste. It has the full flavor of the ingredients, which is a good thing about pure rice sake, but it is light in taste and has a refreshing aroma. The clean taste makes it perfect to drink with food.
