Chivas XV is a luxurious whisky made for celebrating. This fruity whisky is full of rich sultana and warming cinnamon notes, while maintaining a velvety and refined flavour and texture.

It’s then laid down to rest for a long 15-year maturation period, before being selectively finished* in French oak casks.

The moon, just like the sun, has a deep relationship with organic and biological energies. Ancient farmers knew this and followed its natural rhythms to work the land for thousands of years without chemical additions.

Kuyen, Mapuche for “moon,” is a tribute to these wise people and their ancient methods, forgotten by conventional agriculture.

This high-voltage red has great fruit expression with notes of earth and spice on the finish. An enticing complexity refreshes the palate sip after sip and has excellent potential for cellaring.

AGING: 100% in French oak barrels for twelve months (1/3 new, 1/3 second use, 1/3 third use)

“Every batch we create of our 10-year-old Cask Strength represents the direction in which we are taking The GlenAllachie,” Master Distiller, Billy Walker. The ninth iteration coveted decade-old batch release is no different, showcasing the richness and complexities of the honeyed spirit after maturation in the finest oak.

Guided by 50 years of experience and fuelled by his passion for wood management, Billy crafted Batch 8 with perfection in mind. A marriage of spirit from Pedro Ximénez and Oloroso Sherry casks, along with Rioja barriques and medium charred/medium toasted American Virgin Oak barrels, this mahogany malt sits proudly alongside its predecessors. Delivering classic Sherried notes of indulgent dark chocolate and dried fruits, coupled with sweet spices and red berries, this prized release is one to be savoured.

Batch 8 is bottled at natural cask strength of 57.2%, without chill-filtration or added colour.

TASTING NOTES
COLOUR
Intense Mahogany.

NOSE
Bursting with ripe red berries, hazelnuts and heather honey, with hints of orchard fruits, cinnamon spice and gingersnaps.

TASTE
Lashings of dark chocolate, honeycomb and caramelised demerara sugar, followed by notes of treacle, mocha and ginger, with plum and toffee on the finish.

If we learned anything from our Viking ancestors, it is that intensity is a virtue. With this in mind, Gordon Motion, the Master Whisky Maker, hand-selected almost identical quantities of first-fill sherry seasoned European Oak casks, first-fill sherry seasoned American oak casks and refill casks in this rare celebration of balanced intensity.

Created from just 15 casks, the first-fill casks impart the most prominent characteristics on to the whisky. The European oak casks bring vibrant spices and dried fruit while the American oak casks dial up the vanilla and citrus notes. This 21-Year-Old August 2019 Release is an incredibly intense yet balanced whisky.

Gingerbread, pineapple, softly salty wafts of sea air and dried peat earthiness. Palate: Vanilla builds on the palate, paired with salted butter, raisins, stem ginger and old oak. Finish: Baked orchard fruit, slightly flinty, dried herbs and coffee beans.

An attractive pale gold color, which is reflected in its golden label. Being pasteurized only once immediately before shipping and lacking carbon filtration giving the sake a refreshing scent and flavor. The sake has a cloudy appearance to it because it is unfiltered when it is squeezed. The cloudyness comes from the squeezed rice, which is an essential ingredient of the liquor.

Born Gold holds true to its name, being a gold prize winner in the 2016 US National Sake Appraisal. Served cold.

A Carmenere like no other!

All of the fruit comes from our estate’s best block, Block 7. (Planted in 2003). The grapes are hand-picked and gently fermented with only the naturally occurring yeast. To bring you the pure and most honest expression of this emblematic variety and the noble volcanic soils of the Maipo Mountain, this wine is aged exclusively in egg-shaped concrete tanks.
