After the grapes are pressed and the juices settled, the musts are fermented in oak barrels that are 2 to § years old in order to preserve the minerality that is characteristic of this terroir.
Ageing: 12 months in oak barrels, followed by a final 2 months of ageing in stainless steel tanks (100%) on fine lees.
A feminine touch, a charming aspect with pleasing minerality, toasted, oaky notes, suppleness and remarkable ageing potential.

Tasting Notes:
Colour: Darkened deep red.
Nose: Unabashed (Baby Grange) complexities. Ample self-standing fruits already beginning to yield to other vinous intents. Cola, grated chocolate and cappuccino dust bind with juniper and spices. A flash of brown sugar and liquorice, brandy impressions replaced by blood orange-rind. Oak somewhat partially hidden, yet faint scents of cedar and graphite lobby for further bottle maturation.
Palate: Instantly fresh and fleshy. Some overt single-varietal cabernet and shiraz fruits still sit separate. Expected liquorice, stewed plum and blackcurrant, with dark chocolate and mocha in the background. Savoury and salivating – mouth-watering, succulent acidity. Impressive length with concentration, and a mandatory Bin 389 ‘sweet’ core; oak completely absorbed. Polished and refined.
