Dalmore collaborated with three well-known cooperages from Andalucia—Tevasa, Vasyma and Paez. A different blend of Pedro Ximénez and oloroso sherry was created for each of the coopers before seasoning the European and American oak casks. Those casks were used for a finish of up to 3 years.

On the nose, savour the citrus sweetness of Sanguinello blood oranges from Seville, melting into rich notes of bitter dark chocolate and roasted Colombian coffee and the warm scent of Madagascar vanilla pods.
On the palate, taste sweet liquorice stick, Black Forest fruits, roast walnuts and Christmas cake marzipan. The Dalmore 21 provides a triumphant, lingering finish with layers of peach, ginseng, pear tarte tatin and Sanguinello blood orange.

This gives its first base of soft vanilla and honey notes. The whisky is then carefully apportioned between casks which have held 30 year old Matusalem oloroso sherry and Tawny Port pipes. It is then brought back together to harmonise in a first-fill ex-bourbon cask, creating something truly exceptional.

The Glenrothes is an award winning Speyside Single Malt Whisky of exceptional quality. A combination of many factors including unusually slow distillation process in tall copper pot stills deliver a characteristic sweet, fruity and elegant spirit. Further flavours are derived from our extensive knowledge of maturation in oak casks.
