The Macallan Sherry Oak 25 years old forms part of our Sherry Oak range which features a series of single malt whiskies matured exclusively in hand-picked sherry seasoned oak casks from Jerez for richness and complexity. This special single malt delivers an intensely rich and full flavour character, citrus, dried fruits and wood smoke.

This distinguished single malt is matured exclusively for twenty-five years in Oloroso sherry seasoned oak casks from Jerez, Spain. Laying undisturbed in the same casks for a quarter of a century, the maturing spirit transforms to create this luxurious single malt whisky characterised by its rich flavours of vanilla, dried fruits and ginger spice with a long finish and rich mahogany colour.

The Macallan Time : Space Mastery 700ML took inspiration from past whisky masters and the variety of different cask styles available to create layers of complexity with incredible depth of aroma, texture and flavour.

Housed in a uniquely crafted circular vessel symbolising the circle of life and the ongoing journey from the past to the future, TIME : SPACE Mastery is a testament to The Macallan’s enduring legacy of excellence.

Tasting Notes –

Colour –  Warm cherry.

Nose –  Sumptuous Medjool dates, sweet baked figs and rich milk chocolate accompanied by delicate hints of honey and tropical character, reminiscent of dried mango and ripe papaya. Encapsulated by complex sweet oak.

Palate –  A real sweetness is evident with sherry-seasoned dried fruits, orange marmalade and honeycomb. Soft spiced notes of ginger and cinnamon develop.

Finish – Bursts of caramelised pineapple and creamy vanilla linger with the exquisite balance of subtle dark chocolate and coffee.

This 21 Year Old Single Malt Scotch Whisky amplifies The Singleton’s signature richness, in a harmony of rich fruits and silly toffee notes forged by the Trinity Harmony Philosophy.

This deliciously rich harmony is full of bramble fruits, The aroma sings with sweet sherry soaked peaches which contrast with sharp interludes of fresh ginger. Finally, notes of treacle toffee and burnt orange become beautifully balanced on the palate.

It is a labour of love celebrating different whisky characters transformed by aging and oak, then skilfully unified in a symphony for the senses unlike any other.

A fruity, well-composed Singleton that manages to be both light and smooth without compromising any depth of flavour or fullness of palate.

NOSE
Winy top notes rapidly evolve into plummy fruits offset by zesty, oily orange peel. Then, rich caramel toffees, chocolate and malty biscuits.

PALATE
Subtly coating, with a clever balance of gentle fruit tartness and gingery, rich, sweet malt. Becoming lighter and cleaner on the palate.

FINISH
A beautiful balance of lightly cleansing fruit notes and gingery toasted maltiness; a smooth texture, like good chocolate slowly melting on the tongue.

Less spicy, more mature, slightly darker in colour, and deeper in flavour than the 12-year-old; the house style of the distillery, beautifully presented.

A very sophisticated and well-structured old Singleton that balances a rich fruitiness with a gentle aromatic dryness. Beautifully finished and leaning toward dryness while maintaining an enduring, and appetising, sweetness, this combination making it wonderful with intense, hard cheeses, with which it creates a more-ish array of faintly woody, nutty, sweet and salty, creamy and honeyed notes.

APPEARANCE
Rich old amber.

BODY
Medium bodied, rich in the mouth.

NOSE
Complex and well balanced. Smooth and unctuous at first, yet hinting at an intriguing dryness to come on the palate. Aromas of walnuts and polished antique oak lead into a whole bowl of dried fruits (apricots, blackcurrants, apples), followed by ginger biscuits. Later, a smoothly honeyed sweetness is cut by the cleansing freshness of crisp, newly peeled pears.

PALATE
Very full and cooling. A splendid mouth-coating richness with elegant orange oil and rich fruit. Becoming drying and appetising, with notes of chocolate truffle.

FINISH
Full, long, and finely detailed, with clear cedar notes against a smooth backdrop of fine, silky chocolate. Becomes leaner, with a memory of gingery malt; that dryness is now offset by a lingering sweetness in a polished conclusion.
