A Junmai Daiginjo sake created to commemorate the 25th anniversary of the Foo Fighters and the release of their 10th album “Medicine At Midnight”. This HANSHO Silver was brewed while listening to the music of the Foo Fighters.

The band’s rock aspects inspired the creators to create a heavy and expressive flavor with a sharp aftertaste. It has a well-structured mouthfeel and a dignified appearance.

This is Hakkaisan’s classic sake and it has a smooth and mellow taste that you will always find refreshing. You can enjoy it either warm or chilled. When gently heated, the delicate aroma is enhanced.

Slightly fuller and chewier than the Hakurakusei Tokubetsu Junmai, it shares the house style: clean and zippy and remarkably food friendly. Enjoying this out of glassware with plenty of room to breathe can really unlock its nuances, once you catch a touch of grapefruit or melon it disappears. Just full enough to stand up to richer and sweeter foods like simmered Japanese nimono dishes or to cut through chicken liver mousse. And if you’ve never tried the heavenly combination of sake and caviar, this is the place to start. Made from lesser known varietal Kura no Hana rice milled to 55%.

Classic example of a modern sake style, the Hakurakusei Tokubetsu Junmai is laser focused, a clean, direct sake bursting with vitality. Nuances of apricot and peach and faint notes of citrus zest. Fresh and alive with a tingly finish, this sake is designed to stimulate the appetite and to complement light and delicate dishes without overwhelming them. Particularly good with a variety of sashimi or summer salads. High quality Yamada Nishiki rice from Hyogo prefecture milled to 60%

Hakutsuru’s Yamada Nishiki Sake has an elegant fragrance and full-bodied taste. This sake (Japanese rice wine) is purely made from 100% polished and bran removed Yamada Nishiki rice. It has the richness typical of junmai-shu, with a hint of crispness. No alcoholic content has been employed in the making of Yamada Nishiki rice wine.

A harmonious fusion of sweet and savory, delivering a smooth balance of decadent caramel, earthy cacao, zesty kumquat, and nutty almond, finishing with a crisp, refreshing lift.

Perfectly complements ceviche, raw oysters, tuna tartare, poached fish, shrimp cocktails, sashimi, Margherita pizza, burgers, and New York strip steaks.

On the nose, iichiko Saiten is redolent with aromas of honeydew melon, white grape, pickled watermelon rind and kabosu citrus. There are also hints of soy, white pepper and rich barley notes.

On the palate, iichiko Saiten has a strong start and a long finish. It exudes rich umami notes of jasmine tea, white peach, minerals and earth with some citrus and a saline finish that beckons another sip. Its complex flavors offer exciting options for mixing in cocktails.

Ishizuchi Junmai Ginjo is a graceful expression of Ehime’s pure mountain waters. This refined sake opens with fresh aromas of green apple, crisp pear, and soft white blossoms. On the palate, it’s light and silky with a gentle layer of umami, finishing clean and vibrant. A beautiful showcase of Ishizuchi’s elegant house style—perfect for those who love subtlety and finesse in every sip.
