SHIRAIWA IWA 5 – 720MLIWA 5 blended sake is made by former Dom Perignon cellar master Richard Geoffroy. Through precise orchestration, five classes of elements sing in unison to create IWA 5. The rice class, for instance, comprises three varieties: Yamada Nishiki, Omachi, and Gohyakumangoku. In the yeast class, five strains are brought together. Also brought into play are the origin of the rice, the yeast propagation method (moto) and the regimes of fermentation. The blend is the controlled interplay of these many instruments to define a world of possibilities and select the few ones worth pursuing and refining into euphony.
Great presence, from the first glance down to the very last sip, through the seamless flow of a wide spectrum of characters. Perfectly balanced, weightless yet profound, intense and persistent.

The brewery polishes this special rice down to 40%, and brews it carefully with kumamoto yeast at low temperatures to craft subtle and elegant aromatics, a short finish, and an abundantly broad flavor profile.

Aiming to make a pure rice sake that makes the most of the flavor of the ingredients, the rice is polished to 60%. For the yeast, Suigei’s traditional in-house yeast is used, aiming to produce a sake with a good balance of flavor and aroma. The koji is carefully made and brewed slowly at low temperatures. After bottling, the sake is stored in the refrigerator and shipped according to the order.
It features a refreshing aroma and a smooth taste. It has the full flavor of the ingredients, which is a good thing about pure rice sake, but it is light in taste and has a refreshing aroma. The clean taste makes it perfect to drink with food.

chefs and sommeliers at five-star hotels.The name of the sake, TAKANOME,’ which means ‘hawk’seye,’ embodies the desire to perceive things from a high vantage point like a hawk.
The pasteurization is conducted using water heated to 63-65 degrees Celsius to sterilize the contents, which is then cooled down to about 18 degrees using well water before being refrigerated to refine the flavor.
In maintaining TAKANOME’s hallmark “fruity aroma and flavor” and “delicate texture,” rapid cooling is essential during pasteurization.

A Junmai Daiginjo brewed with white koji that is only produced once a year by Tatenokawa Sake Brewery. We carefully create a balance of sweetness and sourness and a pleasant drinking experience.

In 2014, ANA International picked this sake for their First Class and Business Class sake.
